Oyako no kinoko don (chicken & egg rice bowl w/ mushrooms)

### Ingredients:
* 4 Medium-sized king oyster mushrooms
* 1/2 Yellow (white) onion
* 1 Chicken breast
* 4 eggs
* 1 tbsp. onion powder
* 3-4 cloves of garlic
* 1 tbsp. black pepper
* 2 cups basmati or calrose rice
* Light soya sauce
* Mirin
* Sugar
* Sunflower oil 

### Chicken:
1. Cut the chicken breast into thin strips & place into a bowl
2. Mince 3-4 cloves of garlic
3. Throw in 1tbsp. of onion powder into the bowl
4. Throw in 1tbsp. of black pepper into the bowl
5. Throw in some salt to taste
6. Throw in minced garlic
7. Mix everything well until chicken is coated in all of the dry ingredients

### Mushrooms:
1. Shred 4 king oysters into strips (they're roughly the same size as the onion slices)
2. Cook on medium-high heat on a pan until golden
3. Put them away for later

### Onions:
1. Slice 1/2 onion lengthwise
2. Cook on medium-high heat
3. Add 1-2tbsp. of sugar
4. Cook until light-brown

### Eggs:
1. Crack 4 eggs into bowl
2. Stir them up, but not too much (make sure there's a bit of the egg white that is still separated from the yellow)

### Chicken (again):
[While you're cooking your mushrooms and onions]
1. Add 1tbsp. sunflower oil on pan
2. Cook chicken strips on medium-high heat until golden
3. Throw in your mushrooms and caramelized onions into the pan with the chicken
4. Add 4tbsp. of light soya sauce
5. Add 2tbsp. of mirin
6. Cook until the juices are absorbed by the ingredients
7. Dump in the eggs (don't stir too much after)
8. Cook until the eggs have covered the whole mixture (like an omelette)

### Rice:
1. Add 2 cups of rice to rice cooker
2. Add 2 1/2 cups of water
3. Add salt
4. Cook until water is fully absorbed by the rice

Add rice into bowl, then add your mixture on top of rice.
